Research Interests

Dr. Gillespie is an Associate Professor in the Department of Personalized Health & Well-Being. She is one of the first International Board of Lifestyle Medicine certified Registered Dietitians with over 30 years of experience across a broad spectrum of dietetics including clinical, oncology and cardiovascular research, renal, health promotion, and public health education. She is recognized as a Distinguished Fellow in the Nutrition and Dietetics Academy in the National Academies of Practice.  Dr. Gillespie earned a B.S. in Dietetics from Miami University, a M.S. in Nutrition & Dietetics from Saint Louis University, and an EdD in Health Professions Education from A.T. Still University. She is also a National Board-Certified Health & Wellness Coach, an Associate Certified Coach through the International Coach Federation, and on faculty with Wellcoaches. 

 

During her time at UNTHSC, Dr. Gillespie has been a leader in developing distance education programming and providing nutrition, emotional intelligence, culinary and lifestyle medicine education. She served as the Program Director for the Graduate Certificate in Lifestyle Health and the founding Interim Chair of the Department of Lifestyle Health Sciences which has grown into the Department of Personalized Health & Well-Being.  She enjoys traveling and learning about different countries and cultures and is passionate about nutrition education and health coaching.
